Grilled Steak Fish

About this recipe

You can do this with almost any steak fish (like marlin, mahi-mahi, halibut, Atlantic cod, or salmon).

Instructions

Make a marinade by mixing together:

  • 4 tbsp. olive oil,
  • 4 cloves fresh garlic (chopped),
  • 4 tbsp. chopped fresh parsley,
  • juice from 1 fresh lemon,
  • grated rind from the same lemon,
  • ¼ tsp. salt and ¼ tsp. black pepper.

Marinate:

  • 2 lb. swordfish (or any steak fish).

Leave either on the counter or in the refrigerator for 15-60 minutes. (If it’s a hot day, use the fridge; if it’s cold out, use the counter.)

Barbecue on medium heat until it looks cooked and the fish flakes.

Notes

  • You can baste with the remaining marinade while barbecuing.
