Grilled Steak Fish
About this recipe
You can do this with almost any steak fish (like marlin, mahi-mahi, halibut, Atlantic cod, or salmon).
Instructions
Make a marinade by mixing together:
- 4 tbsp. olive oil,
- 4 cloves fresh garlic (chopped),
- 4 tbsp. chopped fresh parsley,
- juice from 1 fresh lemon,
- grated rind from the same lemon,
- ¼ tsp. salt and ¼ tsp. black pepper.
Marinate:
- 2 lb. swordfish (or any steak fish).
Leave either on the counter or in the refrigerator for 15-60 minutes. (If it’s a hot day, use the fridge; if it’s cold out, use the counter.)
Barbecue on medium heat until it looks cooked and the fish flakes.
Notes
- You can baste with the remaining marinade while barbecuing.
