Green Beans with Potatoes

Green beans were voted “best vegetable” at last year’s family picnic, and it’s all because of this recipe.

Instructions

Peel and dice Russet or Yukon Gold potatoes and boil in salted water until half-cooked (about 10 minutes). Then add green string-beans (washed, with both ends snapped off). Boil another 10-15 minutes.

When vegetables are ready, drain, mash potatoes a little with a fork, and toss with olive oil, salt, and pepper.

Notes

  • The potatoes should be mashed throughout the beans.
  • Because green beans are dense, you need sufficient salt.
  • You can also do this with baby new potatoes, unpeeled and cut in half (don’t mash them). 
  •  
    On a hot day, you can serve this dish cold. In this case, toss with a little white vinegar as well.
